Tasting Notes

 

Colour: Deep purple with crimson hues.

Aromatics: Dark cherries, blackberry with tomato leaf and chocolate notes.

Palate:  Dark cherry and cassis fruit with hints of liquorice and bitter dark chocolate.  Lovely spice notes with fine yet firm tannins on the finish.

Cellaring: Will reward cellaring for 5-7 years or more.

Vineyard Notes

45 year old vines planted on sandy loam on the Chalk Hill Vineyard produce small bunches with intense, concentrated flavour. This vineyard consistently produces Cabernet Sauvignon with intense varietal character.  2010 produced wines with great balance and structure.

Winemakers Notes

The combination of a long cold soak maceration and extended time on skin followed by the subtle use of French oak delivers a superb, concentrated Cabernet.

Food Pairing

Roasted beef rump with provincial herb crust, followed by aged ceddar by the fire.
